Well, it’s that time of the year again. Hate it or love it, Valentine’s day is just around the corner. And if you’re lucky enough to be able to share that day with someone special then you’re probably already wondering what you can do to make your Valentines day better then last years. It’s no doubt that food and love go hand in hand, whats better then sharing a romantic meal with that special person? Or how about actually preparing that meal with the one you love?

Don’t Panic!

In the next few weeks leading up to the big day we will try to provide you with some insightful ideas and fun recipes in hopes of enabling you to add  some creative spark to make your Valentines Day meal one for the ages.

Not a “Chef”? You don’t need to be, as long as you can read and follow directions you’re able to do wonders in the kitchen, provided you have the right guidance of course! That’s where we come in, this recipe is sure to do the trick!   Spice up your night with our Red Chili Rubbed Prawns with the Tres Aguaves Citrus Glaze.

Make the night even more romantic by preparing the meal with your partner! We’ve done this recipe in a cooking class environment for private events and the response has been phenomenal! Not only is it easy to prepare, but it’s fun as well! We recommend an extra bottle of tequila, for the two cooks in the kitchen of course!

2011 Catering Trends

Wow it’s already 2011, another year over and a new one just begun. If you are planning a special event in 2011 I am sure you have an idea as to what your theme is and what is required to successfully pull it off. But wait – have you seen the latest trends? Are trends our friends? Well we think they can be. Here are a few ideas that may help you make your event hip and chic.

Party Starters

Let’s start with cocktails. Who doesn’t enjoy a cool and unique beverage especially when you are celebrating? The personalized specialty drink will make a splash this year, in a good way. Party goers are looking for a tasty, colorful and thirst satisfying drink to be presented as guests arrive and throughout the cocktail hour. For martinis try Gin not just Vodka. Wedding Trends

When it comes to food service think user friendly cuisine. Brides and grooms are beginning to lean towards a more comfortable then formal event approach.  The days of exotic menu choices are slowly passing, when I say user friendly I am not so much referring to how you handle it as to how comfortable your guests are with the menu items. Brides and grooms are asking themselves, why serve food no one recognizes? They want their guests to enjoy themselves, so offer them food they’re taste buds are familiar with so they can spend more time dancing the night away and getting reacquainted with old friends.

Instead of plated meals why not try a family style service setting? Not only does that increase the dynamic of menu options available to your guests, but it also provides a more hospitable setting at the dinner table. Here’s a sample menu,  Seared Tenderloin of Pork glazed with Wild Mushroom Marsala sauce or delicious baked Chicken Breast filled with Shaved Prosciutto and Mozzarella cheese? Or how about Beef Short Rib Braised in Red Wine, Tomato Oregano and Garlic over Ricotta Gnocchi’s with Shaved Romano Cheese. Serve this in an attractive Glass or specialty pasta bowl and you have a recognizable creation while using upscale ingredients with a beautiful presentation! Either way there’s enough food and conversation ammo to impress and appease the whole table to spark conversation. And the best part is everyone wins, well at least their taste buds.

Corporate Trends

Green and Organic foods are in and will be for awhile. We should all exercise this practice and you can easily incorporate it into your corporate event plans. With more and more emphasis on health consciousness your corporate guests aren’t always looking forward to a big hearty meal at a meeting anymore.  Impress your customers with your genuine approach to their health, they’ll appreciate it! Boxed lunches as usual are still the most popular item for corporate drop offs, but why not try considering different types of salads with some protein such as grilled chicken breast? If prepared correctly the meals can still taste amazing while saving your customers the worry about working the food off later at the gym. And for those of you who do business throughout the world why not try to add some foreign flare to your menus? Global flavors are on the rise throughout the restaurant industry and your foreign guests will not only be amazed by the taste but also by the thoughtfulness of the menu by including something they are more familiar with. Another tip on impressing your customers and displaying your eco friendliness is to avoid waste and keeping your equipment green! Your caterer should also be able to offer a wide variety of Green disposable plates, cups and utensils. Check with your venders to see if they practice recycling or use cleansers and cleaners that are environmentally sound.

Social Trends

Thinking of having a party for your friends or colleagues but don’t want to go the same old route of buffet and bar service? What about cooking lessons? What’s more fun then learning new and delicious recipes with your friends from a professional? Sit back, sip some cocktails, laugh, and just make sure not to burn the meat! Let us take care of all the dirty work of the preparation and cleaning before and after your lessons so once you’re done you can sit down and relax with your friends.

Here’s a prediction, saving a few dollars will be a huge trend in ‘11! You may consider using your home or your parents or friends home instead of a resort or wedding venue. Think about bathrooms you will need for the amount of guests, areas for food preparation, parking and guest seating to be sure this will work. This is a great way to feel comfortable and personalize your event. Look for other unique venues that may not seem the norm but offer a look of beauty, convenience or just plan fun. They may welcome a little extra revenue for the space rental and will probably offer it at an affordable price.

And who says the culinary fun has to stop after dinner? Afraid that your guests will get buggered out quickly and head for the exits once the dessert is out and the DJ is in full swing? Well in 2011, specialty bars seem to be the new thing and the possibilities are endless. You could go with a cigar and specialty coffee bar for your elder more proper guests, or how about ditching the traditional cake and opting out for a fun dessert and candy buffet? 2011 is the year of informality, you’ve stressed enough about planning the event, so why not let your guests decide what exactly they want for dessert, all you need to do is provide them with a variety to chose from, kick off your shoes and dance the night away!

Make your event your own, I firmly believe that but following a few trends with just a little twist to personalize it is just fine.

New Years Eve 2011

Did you ever see the TV special Frosty the Snow Man? I am talking old school the one where Jimmy Durante narrates and sings. Each time the children place the magic hat on Frosty’s head he comes to life and shouts a joyful “Happy Birthday”. That’s how we should feel each New Year. A chance to start again or like we have just been given an unopened present, you do not know what is inside, you can shake it, you can turn it upside down but you won’t know how it will affect you until the mystery of what’s inside is revealed. Like Frosty we should just be happy we have been given another chance, a new start in life, a new beginning.

What better way to end the old year and to start all over again then to host a New Year’s Eve Party. If you are not on our calendar we will miss you this December 31, if you are then you are in store for some great food, service and event set up. Some of our events will include a formal wedding, a Monte Carlo Casino night, a Tuscany theme Italian Dinner and a casual cocktail party at a private estate in Scottsdale. And hey, if you missed us for New Years Eve 2011 don’t worry we will be around all year.

I guess it would not be a new year without those pesky New Years resolutions. I know it is hard to stay true to them, they usually never work and who really pays attention anyway. Wild Hibiscus Champagne Cocktail

½ Shot White Crème De Menthe

½ Shot Lemon Juice

¾ Shot Gin

1 each Wild Hibiscus Flower in Syrup

Champagne

1 Tsp Hibiscus Syrup

Drop flower in champagne flute, Shake crème de menthe, lemon juice and gin with ice. Strain into Champagne flute. Top off with Champagne, then drizzle in the Hibiscus Syrup -  Enjoy!

Time to Think About The Holidays

If you are hosting an upcoming holiday party, make sure you plan as far in advance as you can. Most often we find so many families plan late because they did not take the time to prepare and menu and didn’t get a “head” count of how many people are going show up.

The things you should plan for is, how many people or servings you plan to have available. Next, plan out the main dish, the side dishes and the dessert. Don’t forget to choose a complementary wine or other beverage you will have on hand.

Next, you can make up a grocery list of the items you are going to buy. Don’t forget to check up on all the coupon discounts you can get your hands on before going to the store! You can save a bundle if you just plan your meals and ingredients that go along with it.

Wedding Catering in Phoenix

If you are planning your wedding catering in Phoenix, it can be a frustrating process. So many details and responsibilities are necessary to assure this very important event runs smoothly from start to finish. Insuring a smooth planning process can be accomplished by researching your service providers prior to your first consultation. Deciding on which questions are the right ones to ask can be the tricky part. Generally most brides have the same concerns so here are 10 budget & food questions brides are asking for 2010.

1) Do I want an elaborate or casual affair? – know your budget limitations. If you try to do too much with a limited budget you will get frustrated easily when things just don’t add up.

2) Who will help with the expenses? – Ask your parents, future in-laws and fiancé. Establish a budget and delegate tasks to family members to help find the best option available. This will take some stress off of your shoulders.

3) How can I best meet my budget? – You can always find a less expensive option but beware. If you are dealing with reputable venders most will find a way to make changes with out too much sacrifice as long as your requests are not too far out of line.

4) How much should I take on to save a few dollars? – If it is a necessity and you have to do some things on your own then plan your time carefully. The last place you will want to be after the reception is sweeping the floors at the venue because you sent the staff home early. Leave as much as possible to the professionals.

5) How do I decide who to invite? – Make an invite list A, B & C ask your parents, in-laws and fiancé to do the same. If you have room left after the A guests then go to B and so on.

6) Should I have sit-down or buffet service? – If you want formal then go plated, but ask about the price difference. Buffets are casual and offer more food selections. What’s right for you?

7) Should I serve one entrée or two? What about the vegetarians? – One entrée is tricky as not all people love chicken, serve two on a buffet and try a combo plate for plated meals. Vegetarian meals are a must these days be sure to offer them.

8) Can we do a taste test? –  Most caterers will jump at the chance to have you in and sample the goods. If not then think twice before signing. Ask if there is a charge for this service before you schedule.

9) Should we offer a full bar or beer and wine only? – Full bars are the most popular and most expensive. Go for the signature drink at the reception and then switch to beer and wine at dinner. If you feel you have to have a full bar then choose affordable yet recognizable brands to pour.

10) Will we ever get a chance to eat? -  If possible have the caterer bring some hors d oeuvres to you while taking pictures. If the venue offers a private room then have a sweet heart table set and take 20 minutes for you and your groom to enjoy your first meal together before entering the reception. Reflect over the days events so far, plan the rest of the evening and the future and imagine the possibilities.
